About Our Brewhouse

Our brewhouse was conceived and built as a laboratory space for students in the SUNY Morrisville Brewing Institute.

Its goal is to craft consistent, high quality beers from the best ingredients available to educate students in quality manufacturing of beer. We source many raw materials from local farmers and maltsters enabling the brewers to have a direct relationship with the source and processing of the raw materials. This allows an inter-relationship aiding in increasing the quality of both the raw materials and the finished beer. As a New York Farm Brewery, we always utilize as many ingredients from local sources as we can, whether that’s hops, malted barley, local maple syrup and honey, produce and spices, or used whisky and wine barrels for aging our beers. In our journey to educate students in manufacturing quality beer, we aim to produce beers both traditional and avant-garde, while instilling a core education in quality manufacturing.

Our Flagship Brews

Belgian Draft Horse, 8% ABV, Belgian Tripel

Candi sugar and bubblegum dominate the nose. A crisp sweetness and full body from a blend of barley and wheat malts from NY Craft Malt make this libation dangerously quaffable. A delicate bitterness and spicy hop aroma comes from New York hops from The Bineyard and Mosher Farms in Madison County.

Cherry Valley Stout, 5.5% ABV, Oatmeal Stout

Brewed as a collaboration with Peaks Coffee Company in Cazenovia, notes of Bing cherries and chocolate dominate the aroma. A grain bill laden with oats gives a rich silky body to balance against roasted barley and the Peaks coffee integrated into the beer. Perfect for a great morning.

The Arsenal IPA, 6% ABV, American IPA

A stiff white foam invites you into delicate aromas of Madison County Cascade and Centennial hops providing aromas of dank pine and lemon. The crisp flavor of this 100% NY IPA is balanced with piney and herbal bitterness on the back of the palate against a delicate combination of wheat and barley malt.

The Crop Pils, 5.5% ABV, German-Style Pilsner

A flagship beer, light, crisp, and easy-drinking. A grain bill consisting of 100% NY Craft Malt Excelsior Pilsner malt and carefully selected old world hops grown in Madison County, this beer is perfect after a long day of work.
